Ingredients:
- 1 cup unsalted butter, at room temperature
- 1 1/2 cups granulated sugar
- 2 large eggs, at room temperature
- 2 3/4 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- For rolling:
- 1 cup sugar
- 2 Tablespoons ground cinnamon
Directions:
- Preheat the oven to 400°F (204°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- In a small bowl, combine the sugar and cinnamon for rolling.
- Roll the dough into balls, about 1 1/2 tablespoons each. Roll each ball in the cinnamon sugar mixture, coating well.
- Place the balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 7-9 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Enjoy warm or at room temperature, and store any leftovers in an airtight container at room temperature for up to 5 days.
