Look at this amazingly delicious no-bake cheesecake!

I have lots of questions about how you like cheesecake.
Do you like a good baked cheesecake?
Or do you prefer no-bake cheesecake?
What kind of crust do you like?
Do you eat it plain or with a topping?
Do you like fruit toppings or chocolate/cookie type toppings?


I love both baked and no-bake cheesecake, but I prefer the no-bake. The thicker the crust the better! And DEFINITELY give me toppings, but only if it’s fruit.

Here’s my perfect no-bake cheesecake recipe. It’s super easy, only uses 6 ingredients, and no baking required.
(However, there is some chill time needed so make sure to plan for that).

Amy’s Best No-Bake Cheesecake

For the crust:

1 1/2 cups crushed graham crackers (vanilla wafers will also work)
1/2 cup unsalted butter, melted (113 g)
1/4 cup granulated sugar (50 g)

For the filling:

16 oz cream cheese, room temp (454 g)
1 cup powdered sugar (114 g)
2 teaspoons lemon juice (10 g)
1 1/2 cups heavy whipping cream—before whipping (360 g)

Crush graham crackers in blender or food processor. Add butter and sugar. Mix with a fork or spoon until combined. Press into a pie plate or spring form pan (8” or 9”)
Freeze 10 minutes
Meanwhile, with a hand mixer or stand mixer, beat cream cheese until smooth. Add powdered sugar and lemon. Beat until smooth.
In a separate bowl, whip the cream until stiff peaks are formed. Scoop about half the cream into cheesecake mixture and gently fold until almost combined. Add remaining whipped cream and continue folding until fully incorporated.
Pour onto pie crust and spread evenly.
Refrigerate at least 6 hours before serving.
To speed the process you can freeze for about 90-120 minutes. Let sit at room temperature for about 10 minutes before serving.
This can be stored in the fridge up to a week and the freezer up to a month.
